Chef’s Note: Here we learn that Billy Batson’s favorite dish is lasagna and, as far as favorite dishes go, it’s a pretty darn good one. It’s not something one makes for dining alone. It is a meal designed for eating with others (family dinner!).
For someone coming from Billy’s background (spoiler: orphan!), this is a rare event.
That said, I am intrigued by the lasagna depicted here. Modern day lasagna is known for its potent combination of layered pasta, mozarella/bechamel, and tomato sauce. It is the addition of tomato, a “New World” food, that makes it a modern version.
But look-
There is no tomato sauce here from what I can see. So, I am wondering if Victor is actually serving up an original version of lasagna, circa late 14th or early 15th c.?
Take good, white flour; dilute it with warm water, and make it thick; then roll it out thin and let it dry: it must be cooked in capon or other fat meat broth: then put it on a platter with grated rich cheese, layer by layer, as you like.
