Chef’s Note: I’m trying to think of what sushi dish features a whole fish – fins, head, and all – that you eat like a drumstick but I’m failing to do so. Even Narezushi gets scaled and gutted.
I’m also not finding it on the Sushi-teria menu.
If anyone more experienced with sushi wants to chime in with a guess, please do, as I am most curious as to what it might be. Not to eat, given it’s dishwater-grey hue and the likelihood of so many tiny bones stuck in the throat – just for scholarly purposes.
UPDATE: I have now been informed that whole-fish sushi rolls are a thing–
